The amaranth plant can be used practically in its entirety. The stems are consumed as a vegetable and its leaves can be added to different stews or used to make soups, creams or tortillas.

Various foods are made with its seeds, such as cookies or "sweet of joy", a very popular dish in Mexico made with amaranth seeds, honey, raisins and walnuts. However, amaranth flour is not suitable for making bread unless it is mixed with wheat flour.

Since it lacks gluten, this food can be part of the diet in case of celiac disease.
