Cochayuyo is a Quechua word (language of northern Chile and Peru) that means aquatic grass. It gives its name to a marine vegetable, a large algae, that nature has offered as food for centuries to many indigenous communities in the south of the American continent. The scientific name of the marine cochayuyo is Durvillaea antarctica. It belongs to the family of Phaeophytas or brown algae, and among them the largest, reaching up to 15 meters in length. It grows along the coast, attached to rocks, especially in areas with high waves and cold waters. \n \nCochayuyo differs from other seaweeds that are commonly sold in our country due to its special volume and its fleshy, elastic and firm consistency, which give it the appearance and texture of a mushroom rather than a sea vegetable. \n
