To understand the process of making Nigari you have to know the following: Nigari is mainly magnesium chloride, and magnesium chloride subsequently forms Natrium Chloride crystals.

The seawater is filtered and concentrated. As soon as Natrium chloride crystals are formed, the crystals and water are separated with the help of a centrifuge. The water is heated and then cooled so that the magnesium chloride crystals settle. The formed layer of Nigari is then broken into pieces. This is a Magnesium Chloride of the highest quality.

Usage suggestion:
As a tofu coagulant. The proportion is one teaspoon (15 g) for each liter of soy drink.

Ingredients:
Yoshikawa Nigari (magnesium chloride).

May contain traces of nuts and sesame.
